Salad with roasted peaches, goat cheese and mint pesto

Ever eat salads than in the summer? The variant is perhaps a million ... The salads we have a choice of vegetables, fruit, meat, cheese, nuts, seeds, dried fruits, dressings, herbs ... And I'm running head more new combinations that I have to try.




If you wish to say slavnostnějším salad, go to this. Baked peaches with goat cheese are luxurious, albeit a bit unusual. The following is salty ham and distinctive mint pesto. Salad can be served as a light dinner or lunch or as an appetizer. Anyways, diners guaranteed to fascinate :-)




Salad with roasted peaches, goat cheese 
and mint pesto (2 servings)

  • 2 peaches
  • 80 g fresh goat cheese
  • 4 slices prosciutto
  • mint pesto

  • 4 handfuls of rocket
  • olive oil
  • red wine vinegar
  • salt and pepper

I preheat the oven to 180 degrees. Peaches I washed, and přepůlila rid of stones, filled with cheese. I put them in a baking dish and put bake for about 10 minutes

Meanwhile, I rucola washed and dried them. In a bowl, I had pokapala olive oil, wine vinegar, salted the, spiced and gently shook the hands to get salad dressing on each ticket.

I spread on plates flavored arugula, slices of dried ham, peaches and mint pesto. It is administered :-)




You can of course use the classic basil pesto, but why not try a slight variation in the form of mint. In addition, I think the peaches sunny days match.


Mint pesto 

  • 60 g mint leaves
  • 1 small clove of garlic
  • 25 g almonds
  • salt and pepper
  • drops of lemon juice
  • 120 ml olive oil
  • 30 g parmesan cheese




Tickets I otrhala, washed and dried them. Rinse blender along with the garlic, then added almonds and mixed again. Finally, I added the lemon juice, olive oil, salt, pepper and Parmesan cheese.
